Adeline Pastor stammt aus Nizza und absolvierte ihre Ausbildung bei Claudette Douillon und Pedro Consuegra sowie an der Nationalen Ballettschule auf Kuba. Sie gewann mehrere Preise, u. a. 1998 die Silbermedaille beim Wettbewerb in Varna (Bulgarien). Im selben Jahr war sie am Kubanischen Nationalballett unter Alicia Alonso engagiert. Als Solistin tanzte sie 1999 bei Janine Charrat in Paris, beim Madrider Ballett unter Victor Ullate und von 2000 bis 2008 am Hessischen Staatstheater in Wiesbaden (Ballettdirektor Ben Van Cauwenbergh). Dort verkörperte sie u. a. Kitri („Don Quixote“), Edith Piaf („La vie en rose“) und die Schneekönigin („Der Nussknacker“). Seit Beginn der Spielzeit 2008/2009 ist sie als Solotänzerin am Aalto Ballett Essen engagiert, interpretierte u. a. die Swanilda („Coppélia“), Effi („La Sylphide“), Carmen („Carmen/Boléro“), Braut („Giselle“), Amme („Romeo und Julia“) und Leprechaun („Irish Soul“), wirkte ferner in „La vie en rose“ (auch als Sängerin), „Tanzhommage an Queen“, „Zeitblicke“ sowie „Undine“ mit und choreografierte das Stück „Somehow“ („PTAH“). In der Produktion "Schwanensee" war sie als Solistin im "Spanischen Tanz" und im "Pas de trois" zu erleben. Zu den Gastengagements der international gefragten Tänzerin gehören Auftritte in Italien, Russland, Spanien, Südamerika und den USA. Im August 2010 erhielt sie beim Labat Danza Festival im italienischen Loano den Grand Prix Giuliana Penzi. In der Spielzeit 2019/2020 tanzte Adeline Pastor in Essen u. a. Kitri in „Don Quichotte“ und war als Solistin und Sängerin „Rock around Barock“ zu erleben. Sie absolvierte 2018 ihr Diplom als Tanzpädagogin und Tanztherapeutin. Neben zahlreichen Workshops, die sie in ganz Europa leitet (u. a. Norwegen, Italien, Rumänien, Griechenland, Spanien und Zypern), war sie Gastlehrerin am Tanzgymnasium Essen-Werden, wo sie Ballett, Spitzentanz und Repertoire unterrichtete.
Am 3. Oktober 2021 wurde Adeline Pastor vom Freundeskreis der Theater und Philharmonie Essen mit dem Aalto-Bühnenpreis ausgezeichnet (zur Pressemitteilung).

In 1999, she became a solo dancer with Janine Charrat at the Ballet Madrid in Paris, under the direction of Victor Ullate, and from 2000 until 2008 at the State Theatre in Wiesbaden (Ballet Director: Ben Van Cauwenbergh). There she performed in solo roles as Kitri („Don Quichotte“), Edith Piaf („La vie en rose“) and as the Snow Queen („The Nutcracker“). Since the 2008/2009 season, she has been engaged as a soloist with the Aalto Ballet Essen. Her roles have included Swanilda („Coppélia“), Effi („La Sylphide“), Carmen ("Carmen/Boléro"), Leprechaun („Irish Soul“) and Bride ("Giselle"), as well as further solo roles in "La vie en rose”, „Homage to Queen", "Zeitblicke" and "Undine". She has also choreographed the solo piece "Somehow" in "PTAH". In the production of "Swan lake" she was dancing as Solist in the "Spanish Dance" and in "Pas de trois". International guest appearances have taken her to Italy, Russia, Spain, South America and the USA.
